Taken from "The Wine Lover's Healthy Weight Loss Plan", the following recipe was very good.Preheat the oven to 450 degrees. Ingredients you will need: 1 c reduced sodium soy sauce 1/4 c honey 1/2 t finely minced garlic 4 salmon fillets, 6 oz. each 2 T sesame seeds To prepare the glaze, mix the soy sauce, honey, and garlic in a small saucepan, then heat to a simmer over medium-high heat. Cook, stirring occasionally, until the glaze is reduced by about one third, about 7 to 10 minutes.
Pour the glaze into a 9" x 13" baking dish. When the glaze is cool, put the salmon in the dish, skin side up. Marinate for 15 minutes. Turn it over and marinate for another 15 minutes. Drain the glaze from the baking dish and reserve it (you will need to wipe up the remainder of the glaze or it will burn in the oven). Bake the salmon until it is opaque, about 10 minutes. Brush the salmon with half of the remaining glaze, sprinkle it with sesame seeds, and broil it for 1 to 2 minutes more. Drizzle the salmon (and/or the dinner plate) with the remaining glaze. It is recommended that this be served with chopped fresh cabbage and jasmine rice. I served roasted pecan-garlic brown rice and bulgur, steamed spinach, and flax sourdough bread. A 2003 Mount Veeder Syrah is the recomended pairing - or Syrah or Merlot in general. |
